Blanca Hernandez is one of those people you don’t forget. She radiates with an upbeat outlook and a love of people. Oh, and she can cook. In fact, when her family in Mexico urged her to open her own restaurant, they all pitched in to help. And so Blanca left the corporate world, hired a group of moms who love feeding their families nutritious food, and launched International Truck of Tacos. But her business concept goes far beyond serving food—she’s also a staunch advocate for women’s rights and promoting diversity. “I feel like it’s my job to not only feed Charlotte great food, but show people that a group of women from different backgrounds can work together to do it.” And for this eternal optimist, the COVID-19 pandemic simply reinforced her belief that community is essential. “It may sound strange, but during the pandemic I felt fearless,” she says. “I just knew that our community would pull through.” In the end, she says that her main goal is to make her family back in Mexico proud. Something she does every day she gets behind the wheel.
International Truck of Tacos received an Innovation Grant which was used to add flexibility with taco kits and home delivery, upgrade equipment to serve safer, improve processes, and invest in technology.
